Today is the first Friday in Lent, which means the unofficial kickoff of grilled cheese season. Including Ash Wednesday, the season of Lent contains eight days on which Catholics must abstain from eating meat. Most famously, this led McDonald’s to introduce its Filet-O-Fish in the 1960s. But if you don’t want to add fare from the Golden Arches into your diet during this season of sacrifice and self-denial, you may look for alternative options. One of my favorites each year is the classic grilled cheese.

A grilled cheese is easy to make: You just need bread, cheese, butter, and a pan. If you want to streamline the experience, however, since you may be making quite a lot of them over the next month-plus, you can invest in a sandwich maker. Also called a panini press, these will create more evenly grilled sandwiches and typically have room to make more than one simultaneously, an important perk if you are tasked with feeding others in your family.
